DEFINITION:
Bottarga is a food product composed of fish roe that is salted and dried according to traditional methods.

USE:
Bottarga is classically used as appetizer, on toasted or fresh pieces of bread. Also it's excellent in salads with tomatoes and onion. Moreover, it's increasingly being used as garnish for spaghetti, raw crumbles on pasta, with a small thread of extra virgin olive oil.
