ROASTED PEPPER

DEFINITION:
Red and yellow peppers with sweet and plump pulp, cored, cleaned from rests, cut in half and grilled by hand.

USE:
Ideal as appetizer, with pasta, sliced in pieces for julienne, and when stuffed with rice. Excellent for adding to the grilled meat second courses, for filling of pizza and for flavoring of soups.
