After a short but intense work experience in the solid company Grosseto Eurofood, he realized that it was time to bet on his ideas and create a company corresponding to his vision. After meeting with Jolanda de Colò, an international leader in the processing of cured meat alternative to pork, and with the support of of first-class canned food manufacturer, Ristoris, and the Ligurian olive oil farmer Oleificio Raineri, new opportunities have risen for Schiaffini that permits him to gain access to government clients and state structures - such as the Kremlin, the Central Bank, Aeroflot. The Dolce and Salato supplier group has grown over time and includes brands such as Riso Acquerello, Frantoio Franci, Pastificio Gentile di Gragnano.

The search for manufacturers is carried out taking into account first of all quality, ease of use, love for the territory, always taking into account seasonality, product availability and quality reliability regardless of time. Years of hard work, visits to factories and kitchens of the best chefs, confirmed the idea of the mission of Dolce e Salato, a brand that customers today rely on to devote themselves exclusively to culinary art.
